基于模糊数学感官评价法的润肺固体饮料研究

摘要:以枇杷果粉、雪梨粉、荸荠粉,百合、山药、鲜芦根、罗汉果、玉竹、佛手、桔梗、青果提取物及冰糖粉为原料,研制一种润肺固体饮料。选取色泽、气味、滋味、状态为评价指标,建立模糊数学感官评价方法,通过单因素实验及正交试验,确定润肺固体饮料最佳配方(质量比),混合果粉∶百合混合物∶玉竹混合物∶冰糖粉为6.5∶3∶1.2∶6。该润肺固体饮料口感纯正,气味清香,具有清热利咽、润肺止咳功效,是一款降低雾霾天气及空气污染对肺部健康影响的食疗饮料。

Research of a Solid Beverage with Moisturizing Lung Effect Based on Fuzzy Mathematic Sensory Evaluation

Abstract:With raw materials of loquat fruit powder,sydney powder,water chestnut powder and the extract of lily,yam,reed rhizome,grosvenor momordica,polygonatum,bergamot,balloonflower,canarium albumand crystal sugar powder,a solid beverage with function of moisturizing lung was developed. Color, aroma, taste, and state were selected as the evaluation index to establish fuzzy mathematic sensory evaluation method. The optimal formula of the beverage(mass ratio)was mainly investigated by the single factor and the orthogonal experiments. Mixed fruit powder: mixed powder of lily: mixed powder of polygonatum: crystal sugar powder=6.5∶3∶1.2∶6. This lung moistening solid beverage has pure taste,fragrant smell,and has the functions of clearing away heat and relieving sore-throat,moistening lung and relieving cough. It is a dietary drink that reduce the effects of smog and air pollution on lung health.
