运动蛋白饮料的配方研究

摘要:运动饮料是能够为人体提供营养和能量的一种饮料,主要包括电解质、维生素、氨基酸等。目前市面上的运动饮料主要为电解质饮料,在口味和功能的选择上较为单一。以颗粒化乳清蛋白为主要原料,配以硫酸氨基葡萄糖、全脂奶粉、糖等物质复配,研发制作富含乳清蛋白的运动蛋白饮料,并通过单因素实验及正交试验对配方进行优化。优化结果是:颗粒化乳清蛋白2.2g/100mL,全脂奶粉4.4g/100mL,糖4.4g/100mL,硫酸氨基葡萄糖0.06g/100mL。由此配方制作的运动蛋白饮料呈乳白色,奶香味浓郁,口感顺滑,甜度适宜。

Research on Formula of Sport Protein Beverage

Abstract: Providing nutrition and energy for human body,the sport beverage is composed of electrolytes,vitamins,amino acids and other components. At present,the sport beverages in the market are mainly electrolyte beverages which are monotonous in flavor and function. Taking whey protein as the main material,together with glucosamine sulfate,whole milk powder,sugar,etc.,a new formula of sport protein beverage was developed in this study by single factor experiments and orthogonal test. The best added amounts of the main components were as follows: granulated whey protein 2.2g/100mL,whole milk powder 4.4g/100mL,sugar 4.4g/100mL,glucosamine sulfate 0.06g/100mL. The sport protein beverage was creamy white,smooth taste and appropriate sweetness with milk flavor by the formula.
