西归紫皮石斛复合饮料的研制

摘  要:以紫皮石斛、西归为主要原料,研制西归紫皮石斛复合饮料的加工工艺及配方。通过感官评分及正交试验,确定西归复方饮料的最佳配方。实验结果表明,西归紫皮石斛复合饮料的最佳配方:西归紫皮石斛复合物15%,柠檬酸0.12%,L-抗环血酸0.1%,柠檬酸钠0.26%。

Development of Compound Beverage of Seselopsis and Dendrobium Devonianum

Abstract: Taking Dendrobium devonianum and Seselopsis as main raw materials,the processing technology and theformula of compound beverage were studied. The optimal formula was determined by the orthogonal tests and sensoryevaluation. The results of experiments showed that the best formula was as follow: 15% compound (Seselopsis extractand Dendrobium devonianum juice mass ratio of 2∶1),0.12% citric acid,0.1% L-ascorbic acid,and 0.26% sodiumcitrate.
