浸泡方式对茶叶中铜、铅、镉浸出率的影响

摘要:采用全自动微波消解仪和ICP-MS测定茶汤中的铜、铅、镉的浸出量,研究浸泡时间、温度、次数、料液比对铜、铅、镉浸出率的影响。结果表明:茶叶中影响Cu浸出率的各因素主次顺序依次为:次数>时间>料液比>温度。影响茶叶中Pb、Cd浸出率的各因素的主次顺序依次为:次数>料液比>温度>时间。从总金属浸泡出规律看,最宜采用的泡茶方式是料液比1∶30,浸泡3 次,温度为70℃,浸泡时间为5min。

Effect of Infusion Pattern on Cu,Pb and Cd Infusion Rate in Tea

Abstract: To investigate the impacts of brew time,water temperature,times of brewing and tea-water ratio on the rule ofheavy metal soaking tendency,microwave digestion and ICP-MS were used to determine heavy metal level. Results showthat the primary and secondary impacts on Cu soaking level in sequence is times of brewing,brewing time,tea-water ratioand temperature the primary and secondary impacts on Pb and Cd soaking level in sequence is times of brewing,tea-waterratio,water temperature,brewing time. The soaking tendency showed us the suitable way to brew tea with tea-water ratio1∶30,brewing 3 times,water temperature at 70℃,and soaking 5 min.
