摘要：嗜酸耐热菌简称TAB，为需氧型、革兰氏阳性芽孢杆菌，其芽孢能抵抗巴氏消毒；部分嗜酸耐热菌会产生异味物质（愈创木酚）而破坏酸性饮料的风味，是果汁等酸性饮料污染的主要微生物。本文考察新型消毒液ECA（电解活化水）阳极液、过氧乙酸和次氯酸钠对嗜酸耐热菌的消毒效果，并进行比较。ECA 阳极液与过氧乙酸对TAB都具有较强的消毒作用：ECA阳极液在浓度为50%、接触时间为20min 时即可使其菌量下降3 个对数值，在原液浓度（100%）下只需接触10min即可达到相同效果；过氧乙酸在浓度为800ppm、接触时间为30min 时即可使其菌量下降3 个对数值，而在高浓度（1800ppm）下只需接触10min 也可达到相同效果。次氯酸钠对TAB消毒效果较差，即使在最高浓度（1800ppm）、接触时间为40min，TAB 菌量也只下降了不足3 个对数值。由于ECA 阳极液本身是氯化钠电解水，比过氧乙酸和次氯酸钠更安全，对人体和环境危害更小，所消耗的化学试剂成本更低，非常适合用于生产果汁等酸性饮料工厂针对嗜酸耐热菌的消毒操作。
Study on the Disinfection Effect of Several Kinds of Disinfection Solution on Alicyclobacillus.spp

Abstract: Alicyclobacillus.spp，also called thermophilic acidophilic bacteria（TAB），is gram positive sporulated bacteria strictly aerobic and the spores of TAB can resist pasteurization. Some TAB strains，as the main cause of contamination of acid beverages such as fruit juice，are well known to cause spoilage of acidic beverages due to the production of guaiacol leading to medicinal/antiseptic off-odors. ECA（Electro-Chemical Activation Water）anode solution，as a new disinfectant，peracetic acid and sodium hypochlorite are studied and compared the disinfection effect on TAB in this paper. The conclusion is that ECA anode solution and peracetic acid have very good disinfection effect on TAB：when the concentration of ECA anode solution is 50% and contact with TAB for 20 minutes，the number of bacteria can be reduced by three logarithmic values，when the concentration of solution is 100%，the same effect can be achieved only by contact with 10 minutes；when the concentration of peracetic acid solution is 800 ppm and contact with TAB for 30 minutes，the number of bacteria can be reduced by three logarithmic values，when the concentration of solution is 1800 ppm，the same effect can be achieved only by contact with 10 minutes. The disinfection effect of sodium hypochlorite is poor. Even the concentration of solution is 1800 ppm and contact with TAB for 40 minutes，the number of bacteria cannot be reduced by three logarithmic values. Because the ECA anode solution is a kind of sodium chloride electrolytic water，which is better than peracetic acid and sodium hypochlorite. It is safer，less harmful to human body and environment，and lower cost of chemical reagents consumed. ECA anode solution is very suitable in TAB disinfection procedure for acidic beverages production（such as fruit juice）factories.
