《食品安全国家标准饮用天然矿泉水检验方法》(GB 8538-2016)中微生物学部分存在的问题与改进建议

摘要:《食品安全国家标准饮用天然矿泉水检验方法》(GB 8538-2016)作为现行有效、强制性的方法标准,其中规定了大肠菌群、粪链球菌、铜绿假单胞菌、产气荚膜梭菌等四种微生物学项目的检测方法。然而在术语描述、文本编排、技术细节等方面存在一定的问题,导致实际执行过程中常出现混乱。该文通过结合实际操作经验,参考相关研究文献,对标准中存在的问题进行分析探讨,并提出改进建议,以期为今后标准的再次修订提供参考,以促进标准的不断完善。

Existing Problems and Improved Suggestions of Microbiology in GB 8538-2016 <National Food Safety Standard Test Method for Drinking Natural MineralWater>

Abstract: As the existing effective and compulsory method standard,the GB8538- 2016 < National Food Safety Standard Test Method for Drinking Natural Mineral Water > prescribed the test methods of four microbiology projects about Coliform bacteria,Enterococcus faecalis,Pseudomonas aeruginosa,Clostridium perfringens. However,some
problems about terms of description,text arrangement and technical details unusually led to confusion in the actual execution process. Based on the experience of experimental operation and referring to relevant literature,the paper analyzed and discussed the problems in the standard,put forward some suggestions for improvement,aiming to provide helpful reference for further revision of the standard and promote continuous improvement of the standard.
