一种酵母风味功能饮料的制备方法研究

摘要:功能性酵母抽提物富含酵母多糖、谷胱甘肽及γ-氨基丁酸,具有较好的功能活性。本研究将功能性酵母抽提物制备成一款功能饮料,经过单因素实验,得到最佳方案配方为:酵母抽提物添加量为1.00%、柠檬酸添加量为0.20%、白砂糖添加量为10.00%、苯甲酸钠添加量为0.02%、橙汁香精添加量为0.08%、黄原胶添加量为0.03%、其余为纯净水。此配方制备的功能饮料风味独特,酸甜可口,还具有较好的生理活性。

Study of Preparation Method of Yeasty Flavor Energy Drink

Abstract: The extracts of functional yeast were rich in yeast polysaccharides,glutathione and gamma-aminobutyricacid,and had good functional activity. In this study,the functional yeast extract was prepared into an energy drink.After single-factor experiment,the optimal formula was obtained as follows: the amount of yeast extract added was1.00%;The amount of citric acid added was 0.20%;The added amount of white granulated sugar was 10.00%;Theadded amount of sodium benzoate was 0.02%;The added amount of orange juice essence was 0.08%;The amountof xanthan gum added was 0.03%;The rest was pure water.The energy drink prepared by this formula has uniqueflavor,sweet and sour taste and good physiological activity.
