摘要:以透光率为指标,利用响应面试验优化慈姑甘蔗汁的复合澄清剂配方,实验得出慈姑甘蔗汁澄清的最佳工艺条件为:瓜尔豆胶用量0.06%,明胶用量0.20%,羧甲基纤维素钠用量0.25%。用优选方案所制备的慈姑甘蔗复合饮料的透光率为89.438%,澄清效果好。

Optimization of Compound Clarifier for Sagittaria Juice by Response Surface Methodology

Abstract: With light transmittance as the index,response surface methodology (RSM) was used to optimize theformula of compound clarifier for sagittaria juice. The results showed that the optimum clarification conditions wereas follows: 0.06% guar gum,0.20% gelatin and 0.25% sodium carboxymethyl cellulose. The light transmittance ofthe beverage was 89.438%,and the clarification effect was good.Key words: sagittaria;sugar cane;compound beverage;clarification;optimization
