摘要：刺梨（Rosa roxburghii Tratt）是贵州特色水果，素有高含量维生素C的美誉。某公司对口帮扶贵州刺梨产业发展，开发了一系列富含维生素C的刺梨产品。本文为验证贵州刺梨的维生素C高含量宣称进行相关实验。跟踪采集贵州五个县（区）的种植基地刺梨鲜果，将刺梨果及果脯送至不同分析检测机构，用不同检测方法验证维生素C含量。经检测分析，2020 年产刺梨成熟鲜果的维生素C含量在1217～1950mg/100g，未成熟刺梨青果维生素C含量在629mg/100g，明显低于成熟期刺梨鲜果，但高于常见水果的维生素C 含量。刺梨果脯的维生素C 含量平均在300mg/100g左右，符合GB 28050《预包装食品营养标签通则》的“富含维生素C”宣称。根据多批次刺梨鲜果和果脯的维生素C测定，对比《中国食品成分表标准版》的常见水果维生素C含量数据判断：刺梨符合高维生素C含量声称。

Analysis of Vitamin C of Rosa roxburghii Tratt and Candied Fruit

Abstract: Rosa roxburghii Tratt is a characteristic fruit of Guizhou，known for its high content of vitamin C. Acompany has assisted the development of Guizhou Rosa roxburghii Tratt industry and developed a series of productsof Rosa roxburghii Tratt which are rich in vitamin C. This article verify that Guizhou Rosa roxburghii Tratt are richin high levels of vitamin C. The fresh Rosa roxburghii Tratt from five different counties（towns）in Guizhou werecollected and sent to different detection institutions. The Vitamin C content of Rosa roxburghii Tratt was verified bydifferent detection methods. According to the tests，the content of vitamin C in ripe of Rosa roxburghii Tratt is 1217-1950mg/100g，and its immature is 629mg/100g which is significantly lower than the matures，but higher than mostof common fruits. The average content of vitamin C in candied Rosa roxburghii Tratt is 300mg/100g，which is in linewith the claim of“rich in vitamin C”in GB 28050“general principles for nutrition labeling of prepackaged food”.According to the determination of vitamin C in many batches of fresh and candied Rosa roxburghii Tratt，andcomparing the vitamin C content data of common fruits in“Chinese Food Ingredient List”，it is judged that Rosaroxburghii Tratt meets the claim of high vitamin C content.
