饮料包装材料灭菌技术研究进展

摘要:饮料无菌灌装系统包括包装材料无菌化、灌装环境无菌化、饮料无菌化。在灌装之前,通过有效的方式对包装材料所含的微生物进行杀菌处理,是实现饮料无菌化的重要环节。本综述基于文献研究结果,重点介绍适用于包装材料灭菌的各种技术,包括传统的热杀菌、化学法杀菌技术以及新型的电子束杀菌、电离辐射杀菌、光脉冲杀菌技术,讨论其灭菌原理、技术要点,并探讨其应用于饮料加工行业的优缺点,旨在为饮料无菌灌装行业选择合适的灭菌方法提供理论支撑。

Review of Different Sterilization Technologies for Beverage Packaging Material

Abstract: The aseptic filling systems for beverages includes packaging materials sterilization,filling environmentsterilization and beverage sterilization. Before filling,the microorganisms contained in packaging materials aresterilized by effective ways,which is an important part of the sterilization of beverages. Based on the results ofliteratures,this review focused on various technologies applicable to packaging material sterilization,includingthermal sterilization,chemical sterilization,as well as novel approaches,including electron beam sterilization,ionizing radiation sterilization, optical pulse sterilization. Sterilization principles, technical points of differenttechniques were emphasized,and their advantages and disadvantages in applying to the beverage industry were alsodiscussed. The purpose of this review was to provide theoretical support for the selection of sterilization methods inbeverage aseptic filling.
