离子色谱法对乳与乳制品中亚硝酸盐和硝酸盐含量测定的方法改进及探讨

摘要:改进国家标准GB5009.33-2016《食品安全国家标准食品中亚硝酸盐和硝酸盐的测定》中离子色谱法测定乳制品中(乳粉、生牛乳、乳饮料等)亚硝酸盐和硝酸盐的方法。乳制品中硝酸盐和亚硝酸盐经水提取后,加入乙酸溶液或乙腈沉淀蛋白(含乳饮料如优酸乳类使用乙腈作为沉淀剂),AS11-HC色谱柱分离,电导检测器检测。在上述条件下,亚硝酸盐和硝酸盐的线性良好,亚硝酸盐和硝酸盐的检出限均满足国标限量要求。该法优化了国标检测方法的条件,解决了其中可能遇到的一些问题,可以更加快速、准确地检测乳制品中低浓度亚硝酸盐和硝酸盐的含量。

Improvement and Discussion on Method of Using Ion Chromatography

to Determine Nitrite andNitrate in Milk and Milk Products

Abstract: The stated method improved National Standard Method GB5009.33-2010 National Food Safety Standard,Determination of Nitrite and Nitrate in Food,the part using ion chromatography to determine nitrite and nitrate inmilk and milk products(milk powder,raw milk,milk beverage and etc.). After the milk products were extracted bywater,acetic acid solution or acetonitrile was added to precipitate protein (acetonitrile was used as precipitant inmilk drinks such as yogurt). AS11-HC column coupled with a conductivity detector was used to analysis the samples.Under the above conditions,the linearity of nitrite and nitrate is good. The detection limits of nitrite and nitrate bothmeet the National Standard Limit. This method optimizes the experimental conditions of the National Standarddetection method and solves some of the potential pitfalls in it. The stated method provides a faster and more accurateway to detect low content nitrite and nitrate in milk and milk products.
