酵母抽提物在枫桥香榧蛋白乳饮料中的应用研究

摘要:本研究通过分析枫桥香榧种子的脂肪含量、蛋白质、微量元素、维生素等成分,发现其含有较高的脂肪含量(62.9%)和蛋白质含量(14.8%),还含有较高含量的Vc 和VB9,分别为116mg/kg 和21.25μg/100g;含有较高含量的铁、钾、锌和镁,尤其是镁含量高达2940mg/kg,因此香榧果仁制备的脱脂香榧蛋白乳饮料具有较高的营养价值,在添加酵母抽提物后还能补充脱脂造成的脂肪感缺失,口感得到提升。

Study on the Application of Yeast Extract in Femgqiao Torreya Grandis Protein Milk Drink

Abstract: In this study,through the analysis of the fat content,protein,trace elements,vitamins and othercomponents of Torreya chinensis seeds,it was found that Fengqiao torreya grandis seeds contained high fat content(62.9%)and protein content(14.8%),as well as high content of Vc and VB9,which were 116mg/kg and 21.25μg/100g respectively. The content of magnesium is as high as 2940mg/kg. Therefore,the defatted torreya protein milkdrink prepared by torreya kernel has high nutritional value. After adding yeast extract,it can supplement the loss offat sensitivity caused by defatting and The taste was improved.
