生鲜乳中微生物检测技术的研究进展

摘要:我国乳品科技目前已进入转型升级的关键时期,由高速增长阶段迈向高质量发展阶段,在这一发展过程中,乳制品的质量安全问题,也逐渐成为社会关注的热点。生鲜乳是整个乳制品供应链中的最上游,其质量安全直接影响下游终端奶制品,同时也是乳品行业能保持健康发展的基石。生鲜乳的微生物污染,在乳品质量安全问题中属于重点、难点,因此,行业机构和相关部门一直致力于探寻低成本、高效率、方便快捷的微生物检测方法,为乳制品生产加工过程中的质量监督提供可行方案。本文对目前生鲜乳中微生物的检测方法以及技术发展情况进行研究分析,为乳品行业和相关部门提供借鉴依据。

Research Progress of Microbiology Detection Technology in Fresh Milk

Abstract: China's dairy technology has now entered a critical period of transformation and upgrading,from the stage of high-speed growth to the stage of high-quality development. In this development process,the quality and safety of dairy products have gradually become the focus of social concern.Fresh milk is the most upstream of the whole dairy supply chain, its quality and safety directly affects the downstream terminal dairy products, and is also the cornerstone for the healthy development of the dairy industry.Microbial pollution of fresh milk is a major and difficult problem in the quality and safety of dairy products. Therefore,industry institutions and relevant departments have been committed to exploring low-cost,efficient and convenient microbial detection methods to provide feasible solutions for the quality supervision in the process of dairy production and processing.This paper studies and analyzes the current detection method and technical development of microorganisms in fresh milk,so as to provide reference for the dairy industry and relevant departments.
