原料牛奶中微生物的污染问题与检测分析

摘要:原料牛奶在整个生产环节中,如牛乳房微生物、挤奶环节、储存过程等都有可能发生微生物污染事件,在初始阶段乳烃素的作用下存在一段抑菌周期,经过抑菌期后原料牛奶就会出现变质现象。原料牛奶是整个乳制品供应链中的最上游,其质量安全直接影响下游的终端乳制品,是整个乳品行业能保持健康发展的基石。近年来,原料牛奶的质量安全问题已成为社会关注的热点,它与消费者的身体健康密切相关。本文介绍了原料牛奶的生产过程,并对其中可能产生微生物污染的途径和检测方法进行分析,以做好有效的防控措施。

Pollution Problem and Detection Analysis of Microorganisms in Raw Milk

Abstract: In the entire production process of raw milk,such as udder microorganisms,milking process,storageprocess,etc.,microbial contamination may occur. In the initial stage,raw milk has a period of bacteriostasis underlactenin,and then the raw milk will deteriorate after the bacteriostatic period. Raw milk is the most upstream of theentire dairy supply chain,and its quality and safety directly affects the downstream terminal dairy products,which isthe cornerstone of the healthy development of the entire dairy industry. In recent years,the quality and safety of rawmilk has become a hot topic of social concern,and it is closely related to the health of consumers. This paperintroduced the production process of raw milk,and analyzed the pathways and detection methods of possiblemicrobial pollution to take effective prevention and control measures.
