摘要:本研究对凤庆红茶营养成分及风味物质等进行分析,可知凤庆红茶风味呈花香与甜香,并含有较多的氨基酸、茶多酚、蛋白质、碳水化合物、VE、VB5、钾、镁和钙。以凤庆红茶为原料制作的无糖茶饮料,汤色鲜红、茶味醇厚、香气鲜浓、甘草味和苦味等后味较淡,口感较好。

Component Analysis of Fengqing Black Tea and its Application in Diet Beverages

Abstract: This study analyzed the nutritional components and flavor substances of Fengqing black tea,and foundthat the flavor of Fengqing black tea was floral and sweet,and contains more amino acids,tea polyphenols,proteins,carbohydrates,VE,VB5,potassium,magnesium and calcium. The unsweetened tea beverage made fromFengqing black tea has bright red liquor color,mellow tea taste,fresh and strong aroma,and light liquorice tasteand bitter taste.
