酸樱桃功能特性及其制品研究进展

摘要:酸樱桃含有丰富的营养物质,尤其富含以花色苷为代表的多酚类物质,具有显著的营养保健功效。本文综述了酸樱桃的功效成分,总结了酸樱桃支持运动人群恢复、降尿酸、改善心脑血管疾病及大脑认知和睡眠改善等生理功能,同时分析了酸樱桃在食品中的开发应用状况,以期为酸樱桃产品的功能研究及精深加工提供参考。

Research Progress of Tart Cherry Functional Characteristics and Its Product

Abstract: Tart cherry is rich in nutrients,especially the polyphenols represented by anthocyanins,which hassignificant nutritional and health effects. In this paper,the functional components of tart cherry were reviewed,andthe physiological functions of tart cherry were summarized,such as supporting the recovery,reducing uric acid,improving the cerebrovascular disease and the cognition of the brain and improving sleep,etc.. At the same time,thedevelopment and application of tart cherry in food were analyzed to provide reference for functional research andintensive processing of sour cherry.
