赤藓糖醇的国内外研究进展

摘要:赤藓糖醇是一种天然甜味剂,常用于食品和制药行业。它是由微生物生产的一种渗透保护剂,其卡路里含量几乎为零,是糖尿病患者和超重人群理想的蔗糖替代品。赤藓糖醇被广泛应用于食品、化工等产业。近几年,随着人们生活水平的提高,健康意识的增强,减糖趋势的增加,赤藓糖醇的应用及研究在不断的深入。本文对赤藓糖醇的来源、物化特性、应用等进行了综述。

Abstract: Erythritol is a natural sweetener commonly used in the food and pharmaceutical industries. It is an osmoticprotective agent produced by microorganisms. With almost zero calorie content,and is an ideal sucrose substitute forpeople with diabetes or overweight. Erythritol is a natural active substance,which is widely used in food,chemicaland other industries. In recent years,with the improvement of people's living standards,the enhancement of healthawareness, and the increasing trend of sugar reduction, the application and research of erythritol have beencontinuously deepened. This article reviews the source,physicochemical properties and application of erythritol.
