摘要:采用气相色谱-质谱及氢火焰离子检测器法(GC-MSD-FID)分析了中国台湾红玉红茶茶汤香气成分,共分析出68 种成分。主要包括:醛类化合物17 种(52.7%),酮类化合物16 种(8.525%),醇类化合物13 种(22.28%),萜烯类化合物9 种(5.965%),芳香烃化合物4 种(0.601%),酯类化合物3 种(7.294%),酸类化合物2 种(0.782%),呋喃类化合物3 种(1.705%),硫醚类化合物1 种(0.148%)。这些挥发性物质形成了独特的红玉红茶香气-台湾香。本文结合香气成分探讨了红玉红茶应用前景。

Analysis of Aroma Compositions of Taiwan Red Jade Black Tea

Abstract: Headspacesolid- phasemicroextraction- gas chromatography- massspectrometry(GCMSD-FID) was used toanalyze Taiwan red jade black tea. A total of 68 components were analyzed,including:aldehyde compounds 17(52.7%),ketones16(8.525%),alcohol compounds 13(22.28%), terpenes 9(5.965%),aromatic hydrocarbonscompounds 4(0.601%),esters 3(7.294%),acids 2(0.782%),furans 3(1.705%) andsulfur ether 1(0.148%). These volatilesubstances form a unique red jade black tea aroma-Taiwanese fragrance. Combined with the aroma components,theapplication prospect of red jade black tea was discussed.
