摘要:对罐装碳酸饮料中空气含量的测定方法进行了研究,找出影响测定结果的各个因素;另外,考察了冷藏与25℃储存过程中罐装碳酸饮料的空气含量、顶隙压力、二氧化碳气容量、表面张力及氧化还原电位的变化情况。结果表明:空气含量测量时使用的碱液浓度、开关阀阀门的放气速度、振摇姿势及打开-关闭开关阀的循环次数等影响测定结果;不同储存温度及储存时间影响碳酸饮料的空气含量、二氧化碳气容量、顶隙压力、表面张力及氧化还原电位,另外,顶隙压力分别与二氧化碳气容量、表面张力存在显著负相关,与空气含量存在显著正相关;空气含量与表面张力存在显著负相关,而二氧化碳气容量与氧化还原电位之间存在显著正相关。

Studies on Effects of Storage on the Quality Characteristics Including Air Contentof the Canned Carbonated Drinks

Abstract: The determination method of air content in canned carbonated drinks was studied,and the factors affectingthe determination results were found out. In addition,the changes of air content,top gap pressure,dissolved carbondioxide,surface tension and redox potential of canned carbonated drinks during the storage of cooling and 25℃ wereinvestigated. The results showed that the concentration of NaOH solution used in the measurement of air content,thebleeding speed of the on- off valve,the shaking posture and the cycling times of opening- closing the on- off valveaffected the measurement results. Moreover,different storage temperature and storage time affected the air content,dissolved carbon dioxide,top gap pressure,surface tension and redox potential of carbonated beverages. In addition,top gap pressure had a significant negative correlation with dissolved carbon dioxide and surface tension,and asignificant positive correlation with air content. There was a significant negative correlation between air content andsurface tension,while there was a significant positive correlation between dissolved carbon dioxide and redoxpotential.
