摘要：应用Minitab 统计分析工具，建立亚硝酸盐的测量系统分析方法，确保亚硝酸盐测量系统稳定可靠。采用离子色谱法对乳制品中的亚硝酸盐含量进行检测，基于软件的统计及分析结果，对亚硝酸盐的测量系统的准确度、重复性和再现性进行评估。经评估，亚硝酸盐测量结果的偏倚不显著，量具R&R（Repeatability&Reproducibility）的占比介于10％～30％，可区分类别数=7，测量系统可以接受。此方法不仅保证亚硝酸盐的测量系统可以信赖，并且为实验室进行测量系统的质量评价提供依据。

Measurement System Analysis of Nitrite Content in Dairy Products

Abstract: The Minitab statistical analysis tool is applied to establish the analysis method of nitrite measurementsystem to ensure the stability and reliability of nitrite measurement system. The content of nitrite in dairy productswas detected by ion chromatography. Based on the statistical and analysis results of software， the accuracy，repeatability and reproducibility of nitrite measurement system were evaluated. The bias of nitrite measurement resultswas not significant. Proportion of gage repeatability & Reproducibility is between 10% and 30%，NDC（Number ofdistinct categories）=7. This method not only ensures that the nitrite measurement system is reliable，but also simpleand scientific，which provides a basis for the quality evaluation of the measurement system in the laboratory.
