β-胡萝卜素包埋与递送技术的研究进展

摘要:β-胡萝卜素作为转化率最高的维生素A 前体,是一种性能优良的天然脂溶性营养素和色素,具有极高的营养价值以及辅助抗氧化、抗癌作用[1]。但是其物化性质不稳定,对光、热、氧敏感[2],生物利用率低,极大地限制了它在食品工业领域的应用。近年来,为改善其相关性能,拓宽β-胡萝卜素的应用范围,国内外学者开展了一系列关于β-胡萝卜素运载与稳定技术的研究。此文综述了近几年来关于不同原料和工艺构建运载体系负载β-胡萝卜素的研究进展,为制备稳定高效的β-胡萝卜素包埋运载体系、提高其生物利用率提供一定的理论参考。

Advances in β-carotene Encapsulation and Delivery Technology

Abstract: As the precursor with the highest conversion rate of vitamin A,β-carotene is a natural fat-soluble nutrientand pigment with high nutritional value and good antioxidant,anti-cancer and coloring effects. However,its physicaland chemical properties are unstable,sensitive to light,heat and oxygen,and low bioavailability,which greatlylimit its application in the food industry. In recent years,in order to improve its relevant properties and broaden theapplication scope of β-carotene,scholars from both home and abroad have conducted a number of studies on β-caroteneencapsulation and stabilization technology. In this paper,we review the research progress of different raw materialsand processes for the construction of delivery systems to load β-carotene in the past seven years,and summarize theadvantages and disadvantages of various methods to provide some theoretical references for the preparation of stableand efficient β-carotene embedding delivery systems and the improvement of its bioavailability.
