蒲公英在饮料工业中的应用研究进展

摘要:蒲公英为药食两用野生蔬菜,由于它广泛的药理活性,在各个行业的应用较为广泛。通过查阅相关文献,此文着重讨论以蒲公英为原料开发的各种各样饮料类产品,并总结出该产品的工艺过程及重点细节,以期为蒲公英资源在食品中的开发应用起到综合参考作用。

Research Progress on Application of Dandelion in Beverage Industry

Abstract: Dandelion is a kind of common Chinese herbal medicine and wild vegetable,which can be used inmedicine,food and other fields. Dandelion contains a variety of functional active substances,which has a wide rangeof applications in food industry. Through consulting a large number of related literatures,summing up widely studiedmaterials of dandelion application in beverage industry of food field,the paper focuses on various beverage productsdeveloped and derived from dandelion and concludes technological process and details of every product. The paper isto provide the all-round references to subsequent deep study for the plant materials in the food industry.
