摘要:国内食品安全得到了基本保障,消费者开始对食品的感官品质提出新要求,消费者进行消费决策时的重要参考指标是产品的感官品质,因此感官分析技术在国内食品领域中的研究应用日趋深入。新式茶饮作为一个新兴产业,面向的消费者群体多为享受多方位感官刺激的年轻人,具有优质且强烈感官体验的产品将成为产业未来发展趋势。感官分析方法中人工感官检验与智能感官检验各有优势,相互补充,为新式茶饮在消费者研究、新品开发、保质期监测以及质量把控等环节提供帮助。文中介绍了当前感官分析技术在新式茶饮的研发与品质管控中常用方法与应用研究进展,以期促进感官分析在新式茶饮行业工业化生产中的进一步推广。

Research Progress on the Application of Sensory Analysis in the Raw Material Endof Modern Tea Drink Industry

Abstract: Consumers are beginning to pay more attention to the sensory quality of food compared to the alreadyguaranteed food safety. The application of sensory analysis technology is increasingly extensive in the domestic foodfield,because sensory quality has become an important indicator of consumers' purchase intention. The modern teadrink industry is an emerging industry,with young people as the main consumer group. Products with higher qualityand stronger sensory experience will become a new trend for its future development. Artificial sensory inspection andintelligent sensory inspection are two powerful tools of sensory analysis technology,which play an important role inconsumer research,product development,shelf life monitoring and quality control,etc. Therefore,the commonmethods and application of sensory analysis technology in the aspect of research and quality control of modern teadrink are searched and collected,in order to promoting the popularization of sensory analysis in the industrialproduction of modern tea drink industry.
