PGA在酸性环境中的质量特性表征 及对可乐饮品持气性的影响研究

摘 要:目的研究海藻酸丙二醇酯(PGA)在酸性环境中的质量特性及对可乐饮品持气性的影响。方法分别应用 pH 计、zeta 电位仪、粘度仪及液相色谱仪研究了不同磷酸加入量对0.1%PGA 溶液的pH值、zeta 电位、粘度、丙二 醇含量及分子量分布范围的影响。另外,还研究了不同PGA加入量对PET瓶灌装的可乐碳酸饮料开盖后室温放 置不同时间下的二氧化碳损失情况。结果磷酸的加入改变了溶液的pH,随着pH的降低,zeta电位逐步降低,粘 度及表面张力则在磷酸加入量达到一定程度后趋于恒定。另外,随着磷酸加入量的增加,PGA链段出现降解的程 度增大,而溶液中游离的丙二醇的含量基本一致。随着PGA添加量的增加,PET瓶装可乐碳酸饮料在开盖后放置 4h 的过程中每隔1h二氧化碳的损失量也逐步减少。结论在酸性环境中PGA分子链段出现部分降解,影响其分 子量分布、粘度及表面张力等特性,但对于丙二醇酯基基本无影响,使其在酸性中具有良好的乳化稳定性,因此, PGA 能起到改善碳酸饮料中二氧化碳持气性能的作用。

Characterization of Quality Properties of PGA in Acidic Environments and Its Effect on Gas Holding Capacity of Cola Beverages

Abstract: Objective To study the quality properties of PGA in acidic environments and its effect on the gas holding capacity of cola drinks. Methods pH meter,zeta potential meter,viscosity meter and liquid chromatography were used to study the effects of different phosphoric acid addition on the pH value,zeta potential,viscosity,propylene glycol content and molecular weight distribution range of 0.1% PGA solution. In addition,the effect of different amounts of PGA addition on the carbon dioxide loss of cola carbonated drinks bottled with PET after opening the lid and being stored at room temperature for different times was also studied. Results The addition of phosphoric acid changed the pH of the solution,and as pH decreased,the zeta potential gradually decreased. The viscosity and surface tension tended to remain constant after the amount of phosphoric acid added was at a certain level. In addition,as the amount of phosphoric acid added increased,the degree of degradation of PGA segments increased, while the content of free propylene glycol in the solution was basically the same. As the amount of PGA added increased,the amount of carbon dioxide loss in carbonated drinks bottled with PET gradually decreased every hour during the 4-hour period after opening the cap. Conclusion In acidic environments,partial degradation of PGA molecular chains occurred,affecting its molecular weight distribution,viscosity and surface tension characteristics.However,it had little effect on the propylene glycol ester group,making it have good emulsification stability in acidic environments. Therefore,PGA can improve the carbon dioxide gas holding performance in carbonated beverages.
