摘要:建立了基于高效液相色谱(HPLC)测定发酵乳中顺丁烯二酸含量的方法。用10%的乙醇溶液做提取剂,甲醇和磷酸盐缓冲液作为流动相,C18 柱进行分离。当顺丁烯二酸的添加含量在1~500mg/kg 时,加标回收率为87.3%~96.7%,相对标准偏差小于4%,定量检出限为0.5mg/kg。该方法具有快速、准确、稳定性好、灵敏度高等优点,可用于发酵乳中顺丁烯二酸含量的检测。关键词:高效液相色谱法;顺丁烯二酸;发酵乳
Determination of Cis-2-Butenedioic Acid in Fermented Milk by HPLC

Abstract: A method for the determination of the content of cis-2-Butenedioic acid in fermented milk by high performanceliquid chromatography(HPLC)was developed. Cis-2-Butenedioic acid was extracted by the solution of 10% ethanol. Themethod was performed on C18 column,using methanol and phosphate as mobile phase. Cis-2-Butenedioic acid contentwas in the range of 1~500 mg/kg,the average spiked recoveries were between 87.3% and 96.7% with RSDs(n=6)less than 4%.The limit of quantitation was 0.5mg/kg. The results indicated that this method is accurate,simple andreproducible,and thus suitable for the analysis of the content of cis-2-Butenedioic acid in fermented milk.
