刺梨活性成分挖掘及其在饮料开发中的应用研究进展

摘 要:刺梨是一种富含多种营养活性成分的天然原料,具有极高的营养价值和广泛的应用前景。刺梨果实富含 维生素C、超氧化物歧化酶、黄酮类、萜烯类等功能性成分,这些成分赋予了刺梨抗氧化、抗炎、免疫调节等多 种生理活性。近年来,随着健康意识的提升,消费者对天然、健康、功能性饮料的需求不断增加,刺梨为健康饮 品的开发提供了新思路。目前,市场上已有刺梨原汁、刺梨气泡水、刺梨茶、刺梨发酵饮品等多种类型的饮料, 这些饮料不仅保留了刺梨的原有风味和营养价值,还通过与其他健康成分的复配,实现了更多的保健功能。本文 综述了刺梨中主要的营养活性成分、含量及生理功能,探讨了刺梨在饮料开发中的应用现状和未来发展方向,以 期促进刺梨在饮料工业生产中的进一步应用,提高刺梨资源的利用率。

Active Ingredients of Rosa Roxburghii Tratt and Its Progress in the Development of Beverages

Abstract: Rosa roxburghii Tratt is a natural raw material rich in various nutritional active ingredients,with extremely high nutritional value and wide application prospects. Rosa roxburghii Tratt is rich in functional components such as vitamin C,superoxide dismutase,flavonoids and terpenes and so on. These ingredients endow Rosa roxburghii Tratt with various physiological activities such as antioxidant anti-inflammatory,and immune regulation. In recent years, with the improvement of health awareness,consumers' demand for natural,healthy,and functional beverages has continued to increase. Rosa roxburghii Tratt has provided new ideas for the development of healthy beverages. At present,there are various types of beverages on the market,such as Rosa roxburghii Tratt juice,Rosa roxburghii Tratt sparkling water,Rosa roxburghii Tratt tea and Rosa roxburghii Tratt fermented drinks. These beverages not only retain the original flavor and nutritional value of Rosa roxburghii Tratt,but also achieve more health functions through compounding with other healthy ingredients. This article summarizes the main nutritional active ingredients, content,and physiological functions of Rosa roxburghii Tratt,and explores the current application status and future development direction of Rosa roxburghii Tratt in beverage development. The purpose is to promote the further application of Rosa roxburghii Tratt in beverage industry production and improve the utilization rate of Rosa roxburghii Tratt resources.
