摘 要:为优化黄芪党参饮料配方工艺,以黄芪、党参为主要原料,通过单因素实验和响应面试验,对黄芪和党参浸 提工艺、产品配方工艺及抗氧化特性进行研究。结果表明:黄芪最佳浸提工艺条件为料水比1∶30,温度60℃,时间 1.5h,此条件下,黄芪浸提液可溶性固形物含量为 1.84%,透光率为 60.79%。党参最佳浸提工艺条件为料水比 1∶ 20,温度 80℃,时间 2h,此条件下,党参浸提液可溶性固形物含量为3.46%,透光率为 66.01%。黄芪党参饮料最佳 配方工艺为:以水质量为基准,添加黄芪浸提液51%,党参浸提液71%,白砂糖3%,柠檬酸0.04%,羧甲基纤维素钠 0.1%。在此条件下,可溶性固形物含量为5.05%,pH 为 4.31,总黄酮含量为 105.30mg/L,总多酚含量为 362.25mg/L。 黄芪党参饮料对DPPH清除率为74.78%,其 IC50 值为 0.203mg/mL,ABTS 清除率为 69.79%。

Process Optimization and Antioxidant Properties of Astragalus and Codonopsis Pilosula Drink

Abstract: In order to optimize the formula technology of Astragalus membranaceus and Codonopsis pilosula beverage,the extraction technology,product formula technology and antioxidant characteristics of Astragalus membranaceus and Codonopsis pilosula were studied through single factor experiment and response surface experiment. The optimum extraction conditions of Astragalus membranaceus were as follows:the ratio of material to water was 1∶30,the temperature was 60℃ and the time was 1.5h. Under these conditions,the soluble solids content of Astragalus extract was 1.84% and the light transmittance was 60.79%. The optimum extraction conditions of Codonopsis pilosula were as follows:the ratio of material to water was 1∶20,the temperature was 80℃ and the time was 2h. Under these conditions,the soluble solid content of codonopsis pilosula was 3.46% and the light transmittance was 66.01%. The optimum formula of Astragalus membranaceus and Codonopsis pilosula drink is as follows:Based on the water quantity,51% of Astragalus extract,71% of Codonopsis pilosula extract,3% of white sugar,0.04% of citric acid and 0.1% of sodium carboxymethyl cellulose were added. Under these conditions,the sensory score of the product was 93,the soluble solids content was 5.05%,the pH was 4.31,the total flavonoids content was 105.30mg/L,and the total polyphenols content was 362.25mg/L. The DPPH clearance rate of Astragalus membranaceus and Codonopsis pilosula drink was 74.78%,its IC50 value was 0.203mg/mL,and the clearance rate of ABTS was 69.79%.
